“Chammanthi Podi,” also known as “Chutney Powder” or “Gun Powder,” is a flavorful and aromatic South Indian condiment. It is a dry powder made from a blend of roasted spices, dried red chilies, lentils, and sometimes coconut.
Ingredients:
- 1 cup dried red chilies (adjust to your preferred spice level)
- 1/2 cup urad dal (black gram lentils)
- 1/4 cup chana dal (split chickpeas)
- 1/4 cup grated coconut (fresh or desiccated)
- 2-3 cloves of garlic
- A small piece of tamarind (about the size of a small marble)
- 1/2 teaspoon asafoetida (hing)
- 1 tablespoon oil (such as coconut or vegetable oil)
- Salt to taste
Preparation
- Heat a pan or skillet over low to medium heat and add the urad dal and chana dal. Dry roast them until they turn golden brown. This can take a few minutes, so be patient and stir frequently to prevent burning. Once roasted, transfer them to a plate and let them cool.
- In the same pan, add the dried red chilies and roast them until they become slightly crisp. Remove them and set aside.
- Add the grated coconut to the pan and roast it until it turns light brown. Coconut roasts quickly, so be attentive and keep stirring. Once done, set it aside.
- In the same pan, add the oil and then add the garlic cloves. Sauté them until they turn golden.
- Now, take all the roasted ingredients—red chilies, urad dal, chana dal, roasted coconut, sautéed garlic, tamarind, and asafoetida—and place them in a food processor or grinder.
- Grind everything to a coarse or fine powder, depending on your preference.
- Add salt to taste and pulse the mixture a few more times to ensure it’s evenly mixed.
